Tarator
Tarator is a type of cold yogurt soup, traditional in the Bulgarian cuisine.
The Bulgarian climate creates favorable conditions for growing a large variety of vegetables, herbs, and fruits and farming a wide range of animals. Therefore, the ingredients used in the traditional cuisine are quite diverse. Usually, Bulgarian tables include cold salads (some of the most famous ones are Shopska, Ovcharska, and Zhatvarska salads) and a wide variety of soups (vegetables, chicken, veal, cold yogurt soup, and tripe soup). The majority of main courses are either water-based stews with chicken, pork, lamb, or veal and vegetables or grilled meat and vegetables. Other traditional dishes of Bulgarian cuisine are pastries such as banitsa, pita, and different types of borek.
