Sirene is a type of brined cheese with a slightly grainy texture, made in Bulgaria. The milk used for the production of Sirene is from goats, sheep, cows, or a mixture of these. Sirene is slightly crumbly, with at least 46-48% of dry matter and containing 44-48% of fat. In Bulgarian cuisine, the most common usage of Sirene is as a table cheese, in salads, and in baking.
